½ box of your choice of pasta
1 small onion
1 garlic clove
1 pint of cherry tomatoes
Handful of fresh parsley
Parmesan cheese
I N S T R U C T I O N S
- Bring a pot of salted water to a boil and cook the pasta according to the package instructions.
- Heat some oil in a sauté pan with high sides over low heat. Finely chop the onion and garlic, then add them to the pan. Sauté for 2 minutes before adding 1 pint of cherry tomatoes. Cover and cook for 3-4 minutes.
- Meanwhile, chop fresh parsley and grate Parmesan cheese.
- Using a spatula, gently smash the cherry tomatoes in the pan and reduce the heat to low.
- Drain the pasta, reserving some pasta water, and toss it into the tomato sauce. Add a splash of pasta water and stir to create a creamy consistency.
- Finish with grated Parmesan and chopped parsley. Serve and enjoy!
